Hello. My name is Erik Johnson. I am the head roaster here at Mocha Joe's Roasting Company.
I was thinking the other day about when I started roasting coffee, and how grateful I was for any information I could find about it. I lived off of sweetmarias.com for a long time, like many beginning roasters, and then went on to read any blogs, articles, or books that I could get my hands on - mainly thanks to my good friend and fellow coffee roaster, Alex.
This blog's thesis is deceptively simple: How do changes in the roasting process effect the flavor in the cup.
This is the question that I ask every time I'm roasting. I have an endless amount of questions. As I have gotten deeper into the the world of roasting, coffee has only proven itself to be more complex than simple. This blog will be a look into our process - what are the questions we are asking, what are the things we are trying, what do we come to after a day behind the machine.
